Delices and Gourmandises’ coffee mini cakes

Like all Delices and Gourmandises’ products, its silky and tender coffee mini cakes are elaborated following the traditional recipe and using fresh, healthy ingredients to delight your taste buds with no risk for your health or your weight!

 

For 12 cakes, you will need:

- 150g unsalted butter, at room temperature

- 100g golden caster sugar

- 50g soft light brown sugar

- 3 medium eggs, beaten

- 3 tsp instant coffee

- 2 tsp boiling water

- 150g self-raising flour

- Pinch of salt

 

Preparation:

- Preheat your oven to 180°C/350°F/Gas mark 4.

- Cream the butter and both sugars together until the mixture is light and creamy.

- Beat in the eggs, one by one, mixing well between each addition.

- Dissolve the coffee in the boiling water, add to the mixture and mix to combine.

- Sift the flour and a pinch of salt into the bowl and add to the espresso.

- Line 18 holes in 2 bun tins with fairy cake cases.

- Spoon into the cake cases.

- Bake on the middle shelf of your preheated oven for about 15 minutes until golden, well risen and a wooden skewer inserted into the middle of the cakes comes out clean. It’s better if you swap the trays after 12 mins.

- Leave the cakes to rest in the tin for 2 minutes then ease out onto a wire cooling rack and leave until cold.

 

Very moist, light, just like Delices and Gourmandises’, these coffee mini cakes go great with a hot cup of coffee, tea, or cocoa.

Well Dante, what if you failed to make a recipe which was actually an easy one?
You can't possibly succeed in making all your recipes, unless you're not human.

I want to try this recipe but I guess I'll change the coffee perfume and add chocolate perfume instead :)

I didn’t inherit my mother’s talent on cooking, she is an excellent cook! When we went to visit her and my dad she prepared us this Delices and Gourmandises’ coffee mini cakes! My children really enjoyed!

Well that may be true but don't forget that the most important thing is to cook with love if you make cooking stuff for someone else. Delices and Gourmandises products are rather good I won't deny, but I think it's always better to try a recipe yourself and see if you have improved in terms of cooking skill or not. That's the most interesting part for me. I don't see any point in ordering something you can make homemade, unless it's a recipe from a famous well-known cook and you don't have the skills to make it.
Anyway that's just my opinion, no more no less.

I haven't tried the coffee mini cakes sell by Delices & Gourmandises, I always make it myself so I can't compare.I can't tell what happened since I didn't try your homemade coffee cakes, perhaps it was a bit dry and not enough spongy, that's one of the most frequent problem people encounters when they cook this kind of cakes. You have to be very careful about the quantity of water and salt, you should follow it step by step and cook quietly. Then you'll get a good result I guess.

Yes Dante, I agree with you about to cook with love! I really love cooking but I compared my coffee mini cakes with those of Delices and Gourmandises and honestly I prefer so far Delices and Gourmandises’ coffee mini cakes! Maybe I forgot some ingredients because mine was not like those from Delices and Gourmandises! I’m wondering? Do you think that homemade should be better?

I have already tried to do this Delices and Gourmandises’ coffee mini cakes recipe and it was not horrible. There was something different from those of Delices and Gourmandises’, may be the fact that mine was homemade! Those of Delices and Gourmandises’ are better for sure! Next time I will order it as always
