Ingredients needed to prepare 60 pieces

Fudge toffees are easy to make. Its preparation will take less than an hour: 30 minutes for preparation and 20 minutes for cooking. What you need are:

  • 520 g can condensed milk
  • 520 g light brown muscovado sugar
  • 150 g butter, diced
  • 4 dessert spoons cocoa powder
  • 1 tsp instant coffee (optional)
  • 1/4 tsp salt
  • 1 and 1/4. tea cup water
  • 100 g pecans or roasted cashew nuts, chopped
  • 1 tsp vanilla extract
  • Sunflower oil for greasing

First lightly grease a 14 x 14 inch cake tin with sunflower oil, and prepare a small bowl of water for the soft ball stage test.

Then, place all the ingredients except cashew nuts and vanilla essence in a large sauce pan. Heat gently and stir until the sugar dissolves, and the mixture boils and bubbles.

Keep under medium flame for 5–10 minutes, stirring constantly until it reaches 120°C on a sugar thermometer. Reduce heat, and then test for soft ball stage: pour a drop of the mixture into water, with your fingers, make it into a ball.

If it does not dissolve, it is in the soft ball stage which means it is ready and you can turn off the fire.

Otherwise, keep cooking few minutes longer.

Keep pan on the cooker, add vanilla extract and continue stirring until you feel the mixture is thickening slightly. Pour it into the greased cake tin, and garnish the top with chopped cashews. Then, leave to cool for one hour.

Cut into small squares and store in the fridge or an airtight container.

So Fudge toffee is a combination of Fudge and Toffee? I am kind of confused about the difference between the two. Also, what about caramel? What is the difference between all three??

Maybe you forgot to add more sugar in your recipe Agnes. Children tend to love sweet pastries I guess.

Too bad for your granddaughter, hope she'll like it when she grows up :)

My granddaughter doesn’t like toffees! I tried this toffee recipe by Delices and Gourmandises when she came here on January but she didn’t like very much! So I ordered chocolates for her! I am a client at Delices and Gourmandises and I like to order delicacies there for me and for my family!

Everything? Well I'm not really sure about that. I'm more interested by the bestsellers products, it will give me an idea about the quality of the pastries, delices and gourmandises has a huge catalog so if you have any suggestion I'd be glad to hear.
