A miso and white chocolate cookies recipe

Japan food lovers, this recipe is for you! Of course when we hear about miso, we immediately think of this good Japanese soup. However, be rassured that your cookies will not taste like a soup! Delices and Gourmandises explains you how to easily prepare this delight.

List of necessary ingredients (for about 30 cookies)

- 750 gr of flour
- 2 teaspoons of yeast
- 1 teaspoon of baking soda
- a pinch of salt
- 220 gr of sweet butter + 2 tablespoons, at room temperature
- 60 gr of sweet white miso paste
- 320 gr of brown sugar
- 220 gr of white sugar
- 2 large eggs
- 1 teaspoon of pure vanilla extract or intense vanilla paste
- 340 gr of white chocolate chips

Preparation, step by step

- Take a large bowl and mix yeast, flour, baking soda and salt.
- Mix the miso, butter and sugars in a food processor for 2 to 3 minutes until you get a light brown colored mixture.
- Add the eggs and vanilla.
- Beat again so that the eggs are fully integrated.
- Pour in the flour mixture and mix well.
- Finally, pour the white chocolate chips and mix for a few seconds.
- You can bake directly or let the dough cool first.
- Preheat the oven to 180°C.
- Arrange cookies in several rows of equal size.
- Form balls with the same quantity of dough with your hands.
- Put a distance between the cookies on parchment paper-lined baking tray.
- Cook for 10 to 12 minutes, until the edges become lightly browned.
- Let the cookies rest on the hotplate for 5 minutes.

You can let them cool on a rack at room temperature before serving. But you can also enjoy them lukewarm.
